Instructions
  1. Grind the oats in the kitchen aid.
  2. Whisk together the dry ingredients (oats, whole wheat flour, baking powder, baking soda, sugar, cinnamon and salt) in a small bowl until well combined. Take a separate large bowl and combine the wet ingredients (buttermilk, egg and vanilla extract).
  3. Add the dry mixture to the wet mixture until well combined.
  4. Let the batter rest for 10 min while you cut the apple into small cubes.
  5. Lightly grease a nonstick griddle or skillet over medium-high heat.
  6. Pour batter onto griddle and spread to make a pancake (it’s normal that the batter is rather thick – it’s those thick and fluffy pancakes we want!).
  7. Cook about 2-3 min until the pancake is dry and the edges are slightly crispy. Flip pancake and cook 2-3 min longer until lightly golden on both sides. Adjust heat as needed to prevent burning.
  8. When the pancakes are ready, cook the apple pieces for a few minutes until lightly golden brown. Add cinnamon and maple syrup and leave to caramelize. Serve the pancakes with the warm apple cubes and some extra maple syrup if you like.
