Burgers with Halloumi, Hummus & Sweet Onion Rings
- 250 g minced beef
- 2 tsp mustard
- 2 tbsp almond flakes
- 3 tbsp fresh parsley chopped finely
- 1 shallot chopped finely
- 2 tbsp olive oil
- 1 tbsp all-purpose flour
- Sweet onion rings
- 1 onion sliced into thin rings
- 1/2 tbsp olive oil
- 2 tsp harissa *
- 1/2 tbsp cane sugar
- Spicy sauce
- 2 tbsp mayonaise
- 2 tbsp greek plain yoghurt
- 1 tbsp cumin
- 1 pinch of cayenne pepper
- 1 tbsp lemon juice
- 1/2 clove of garlic chopped finely
- 2 mini-ciabatta or other hamburger bun
- 120 g Halloumi cheese
- 1/3 eggplant
- 4 tbsp hummus
- 30 g mixed lettuce
- Start with the spicy burger sauce. Combine all ingredients for the sauce in a medium-sized bowl. Season with pepper and salt, according to your own taste. Set aside for a moment.
- Cut eggplants lengthwise into thin slices. Put eggplant slices on a baking tray with baking paper. Brush slices with some olive oil and sprinkle with coarse salt. Put the tray in the oven and bake for 20-25 min in a preheated oven at 180 °C.
- Meanwhile, prepare the burgers. Start by roasting the almond flakes into a dry frying pan at medium-high heat until golden brown (you don't need to use any oil or butter). Heat 1/3 of the olive oil in a non-stick skillet on medium heat. Add chopped shallot and fry lightly. When shallot is shiny, turn off the heat and add the chopped parsley. Mix well. Add almond flakes, shallot, parsley and mustard to the minced beef and mix well. Season, according to your own taste, with pepper and salt. Divide the beef into two parts and form burgers. Coat burgers with the flour. Heat the remaining olive oil at medium-high heat and cook the burgers until brown on each side.
- Meanwhile, cut the Halloumi into thin slices (+/- 0.5 mm). Add the Halloumi to a dry frying pan at high heat and bake for 1 min on each side until golden brown (you don't need to use any oil or butter). Set aside.
- Prepare the sweet onion rings. Heat olive oil in a non-stick skillet at high heat. Add the onion rings and fry them until lightly brown. Add harissa paste and cane sugar and leave to caramelise for a few minutes.
- Now we're going to 'build' the burgers. Cut the ciabatta into two halves and arrange the burger as follows: spicy sauce - eggplant slice - lettuce - meat - lettuce - Halloumi cheese - eggplant slice - sweet onion rings - hummus. Serve immediately.
* Harissa is a Tunesian hot chili pepper paste, the main ingredients of which are roasted red peppers, spices and (vegetable) oil. As you can imagine, it is very spicy, so you should use it with caution and never add too much at once. You can find harissa paste in North African supermarkets and organic food shops, but also in most supermarkets nowadays.
