About Claudia’s Food Court
Claudia’s Food Court is a feel-good food blog that wants to inspire you with creative and healthy recipes that are easy and quick to prepare.
I think it’s important to take care of yourself, so most of my recipes are health focused. Veggies, fruits and fresh herbs are given leading roles in many of my recipes.
What I like most is to get creative with so-called not so healthy dishes, such as burgers, pasta, pizza, cookies, pastries … Those are good right?? But maybe not so good for you if you eat them every day … So what do I do? I try to transform them into a healthy (or at least healthier) version!
Curious? Try these recipes to start with:
– white pizza with parsley oil
– eggplant cannelloni with mozarella & tomato
– carrot cake cupcakes with oatmeal & cream cheese topping
– blueberry muffins with almond butter & jam
Once and a while, however, you’re also going to find some not so healthy – but supernjummie! – recipes here … After all, a girl’s gotta live a little, right?!
Another thing I should mention is that all recipes and stories on Claudia’s Food Court are available in both Dutch and English. I live and work in the Dutch-speaking part of Belgium, but I just love learning languages and I also regularly visit non-Dutch food blogs. So I thought that making a food blog in two languages would be a nice challenge!
My name is Claudia and, ever since I was little, I have been passionate about everything that revolves around food. If it were up to me, all I would ever do is eat breakfast (all day long), read cookbooks and throw dinner parties for my family & friends.
For a long time, I thought that I was going to do something with food when I’d grown up, but then I went to Law School … and now I have a job in the legal sector (the name ‘Claudia’s Food Court’ is a little wink to my everyday life). I can now say that I am glad I made this choice back then, because I really love my job! But whenever I have a spare moment, I get in the kitchen and try out some new healthy recipes!
There is no doubt that I got my love for healthy food from my mom. When I was little, we used to browse through cookbooks together in the couch, looking for something interesting to cook or bake that day. Afterwards, I wrote the tastiest dishes down in little recipe notebooks. Recently, I rediscovered one of those notebooks while cleaning up. Before that, I had already thought about starting my own food blog, but I hadn’t done anything concrete so far. The rediscovery of that little book, however, really put some things in motion.
But, ultimately, it was my husband Wietse who convinced me to just go for it! I owe the very existence of this food blog entirely to him. He is not a graphic designer, website designer or (food) photographer, but he still manages to engineer it all! I feel very lucky to not only have him as my best friend and soulmate, but now also as the technical mastermind behind this food blog!
